I got this book as a gift for Xmas and it is absolutely pure genius! It's a great go-to source for the beginner cook -- everything from selecting meats & produce to getting the right tools for your kitchen all the way to basic & detailed cooking techniques -- but it also serves as a great reminder and reference book for the mid-level cook who may need a little refresher course. It also includes some fabulous recipes for practical execution of these techniques -- just brilliant! The book is huge so, you definitely get your money's worth. Highly recommended.
